The smoke from the American and Yosemite Valley fires are not hindering the set-up of the Best in the West Rib Cook-Off, which starts Wednesday at 11 a.m. Barbecue restaurants from around the world spent the last few days setting up, prepping their grills and the food they will be serving to an estimated 500,000 rib lovers over the course of six days.

Dan Johnson, owner of John’s Hickory Smoke Barbecue, from Norfolk, Vir., and his crew arrived at Victorian Square Saturday afternoon, setting up grills, tents and merchandise. This year marks their 15th year at Rib Cook-Off and they are hoping to place in one of the contest categories again. The team won first place in the Best Sauce category in 2010.

“We’re just waiting to turn on the grills and start cooking,” said Johnson. “The health department won’t let us start until tomorrow so we’re getting up all our tents now so we don’t have to worry about it as we cook.”

Paul Mackay, owner of Ausson Aussie, isn’t too concerned about the smoke.

“I know that some are sensitive to it, but we’re having a nice breeze today that’s keeping the smoke out,” said Mackay. “Hopefully, all week will be as nice.”

Mackay is especially excited for the dedicated local following his barbecue has built and he hopes to place in the Best Ribs competition this year. Other barbeque tents are simply looking forward to feeding fans.

“We just pulled in last night from Cleveland,” said Cory Jackson, a chef with Desperado’s BBQ and Rib Company. “We starting setting up around seven this morning and just finished.”

“I just want to start feeding people some ribs,” said Jackson. “Get the ribs out of smokers and onto people’s plates. It’s nothing but goodness.”

Best in the West Rib Cook-Off 2013 Wednesday schedule

The Rib Cook-Off starts Wednesday and goes through Monday. Wednesday through Sunday, the event runs from 11 a.m. to 9 p.m. On Monday, the event runs from 11 a.m. to 5 p.m. The Kids Festival and Craft Fair will be open throughout the entire Cook-Off.

Below is the Wednesday schedule of Rib Cook-Off entertainment events.

11 a.m. to 2 p.m.: Emerald City on the West End Stage

2:30 to 5:30 p.m.: Hired Gunnz on the West End Stage

5:30 to 9:30 p.m.: Paul Covarelli at the Orozko

6 to 8:30 p.m.: Mojo Green on the West End Stage

6 to 10 p.m.: The Scotts at Trader Dick’s

7 p.m.: Diego’s Umbrella on the Nugget Main Stage sponsored by KRZQ

7 p.m. to Midnight: Rustler’s Heat with Country in the Cabaret in the Nugget Casino Cabaret
