SPARKS -- Nancy Calabrese has seen a lot of changes during her 13-year tenure as the Food and Beverage Manager for the Resort at RedHawk. One of the biggest of those came roughly seven years ago when the resort remodeled and expanded its golf course restaurant to emphasize strengths and better fit its needs.

The restaurant was previously named Freddie’s but following the remodel, RedHawk officials rebranded the establishment and gave it the name ‘David’s’ in honor of Wingfield Springs developer David Loeb, who had recently passed away. Calabrese said the change to David’s has been a huge success.  

“Before we redid the restaurant, we only had one section for seating kind,” she said. “We kind of said ‘being on the 18th green, the view is the best part.’ But yet much of our restaurant seating had customers with their back to the golf course. We wanted people to see the view. That’s what the expansion was about. Now we’ve got expanded seating with a patio and bar that overlook the 18th green.

“When the weather allows people to sit out there, that’s our busiest time. We want to capitalize on the patio seating. Most other restaurants in town, with outdoor seating, you look at a street or a parking lot. Outdoor seating is our big draw.”

David’s is one of just a few restaurants in the Wingfield Springs and RedHawk community. Calabrese says that adds to the environment at David’s.

“We like to say we’re the locals’ restaurant. We are definitely family oriented,” she said. “We do benefits with our local schools. We have coloring contests for the kids that come in. A lot of families come in and talk about how they raise their kids coming through here.”

RedHawk officials like that community and family feel to David’s. It’s something they strive to maintain and enhance. Calabrese said David’s is not just the restaurant at the golf course, but more of a centerpiece in the community for locals to share food and drink as well as a few stories along the way.  

“I think we are a part of the community,” she said. “We’re connected to homeowners.

“We have live music on Fridays in the summer. A lot of people say you can’t beat it. It’s beautiful in the evenings. You sit out by the 18th green. Maybe you don’t feel like you’re in Sparks. We had all the NFL games on Sundays. You don’t have to go downtown to a sports bar. We try to have something for everyone.”

That’s not the only way Calabrese and her staff give David’s a community theme. She’s been hiring local teens and young people for years to work at the restaurant. And she know the advantages of doing so.

“Almost all of the kids that come through are from Spanish Springs or Reed high schools. They get a safe responsible job. Our golf course is the home facility for Spanish Springs. That sense of community is what we’re really trying to build. Our local families come in. They see local kids that they know working here. It’s a good feeling.”  

David’s has patio seating when the weather allows. It also has restaurant and bar seating as well as adjacent rooms for private parties up to 40. Calabrese said that gives David’s flexibility to host all kinds of groups, from families looking for a dinner, to couples wanting a drink and appetizer to small groups opting for an intimate experience and not an impersonal setting.

“I feel like for us, we’re just the right size. We can do many things ... I hope our customers, from beginning to end, had good food and a welcoming and comfortable experience. That’s what we try to make it.

“A lot of our customers are regulars. They like the familiarity. Everyone knows everyone. There’s that little bit of ‘Cheers’ atmosphere with comfort food, everything from a cheeseburger to a fillet. That’s our thing.”
